Some nights I get really basic for a fast, yet good meal - others I prepare more elaborate dishes. Whole Red Snapper
Grilled with a Mediterranean flair... this was a real hit. Took one whole, cleaned red snapper and brushed it with a mixture of lemon juice, olive oil fresh chopped oregano and salt and pepper - made a couple of slits in the meaty part of the fish and rubbed the marinade in. Let this sit for about 10 mins, then grill over medium heat, covered for about 15 mins or until fish is done. Serve it on a platter covered with chopped onion and flat leaf parsley, sprinkle crumbled feta, deiced tomato and olives atop -
